This is Ben’s favourite drink to make. We’ve dedicated 3 lemons to it (yup, we’ve sacrificed another lemon for a mug of this drink and chances are there’s more to come…). It’s the most simplest drink any person can make. It just has 3 basic ingredients, hot (boiling) water, honey, and slices of lemon. You can find this drink in nearly every Hong Kong style cafe in North America and of course in, Hong Kong. You’ll be amazed how just flavourful this drink is, even with plain hot water.
Hot Meyer Lemon Honey Drink (热柠蜜)
3 – 4 slices of lemon (per serving)
A good drizzle of honey (to taste)
Boiling hot water
Boil some water in a pot or kettle. In the meantime, add honey to a glass cup or mug and then the slices of lemon. Add the hot boiled water to the honey and lemon. Then, using a spoon make sure you press down on the flesh of the lemon slices in the mug (like you would with a mortar and pestle) and stir everything up.
Note: If you want to get all fancy, you can substitute the water with tea instead. Still good, but try it with just the regular water first.
